Squash, sweet potato, walnut and halloumi salad.
This vibrant, full of goodness salad is extremely quick and easy to whip up! Ideal on a summers day:)
STEP ONE - SQUASH AND SWEET POTATO
INGREDIENTS:
- Diced sweet potatoes and squash -600G
- Olive oil
- Drizzle of Soy Sauce
- Salt and pepper
METHOD:
1.Place the diced sweet potatoes and squash in a baking tray. Drizzle with olive oil, salt and pepper.
2. Place in the oven for 30 minutes on 185c (until roasted, soft and cooked!).
You can also half boil the sweet potato and squash (for a few minutes) before placing in the oven.
STEP TWO - HALLOUMI CHEESE
INGREDIENTS:
- 1 Package of halloumi cheese (cut into small cubes)
- Drizzle of Olive Oil
- Pepper
METHOD:
1.In a baking tray add the halloumi, a drizzle of olive oil and pepper.
2. Place in the oven for 6-7 minutes and not longer.
You do not want your halloumi tasting like rubber.
STEP THREE - DRESSING
INGREDIENTS:
- 2tsp of milt curry powder
- 1/3 tsp of turmeric
- 3tbs of Olive oil
- 1tsp of cyder vinegar
- 1tsp of brown sugar
- Half a squeezed lime
- Small drop of Scotch bonnet sauce
METHOD:
1. In a bowl add all the ingredients above and mix.
2. Your sauce is ready to serve up!
STEP FOUR - PUTTING EVERYTHING TOGETHER
EXTRA INGREDIENTS:
- Handful of pineapple
- Handful of walnuts
- Handful of pomegranates
- Good handful of parsley
METHOD:
1. Once the halloumi and sweet potato has cooled down, add them together in a bowl.
2. Then add the pineapple, walnuts, pomegranates and parsley.
3. Drizzle the dressing on top!
