Undhiyu is a traditional Gujarati Sabji. Undhiyu has many variation like, Surti Green Undhiyu, Red Undiyu, Tawa Undhiyu, Kathiyawadi Undhiyu etc. Previously I shared traditional surti green undhiyu recipe. Now this is very easy to make but taste as good as traditional undhiyu.

1/4 Cup Fresh Grated Coconut
1/4 Cup Crushed Groundnuts
1 tbsp Carom Seeds
1 tsp Sesame Seeds
1/2 Cup Green Garlic
1 tbsp Fresh Coriander
2 tbsp Ginger Garlic Chilly Paste
2 tbsp Sugar
1/2 tsp Garam Masala
1/4 tsp Turmeric Powder
2 tsp Red Chilly Powder
2 tsp Coriander Cumin Powder
Salt to Taste
3-5 Brinjals
80 Gram Purple Yam
2 Chopped Potatoes
1 Sweet Potato
3-4 tbsp Oil
1/2 tsp Asafoetida
500 Grams Papdi
1/2 Cup Water
