Welcome to the Paella episode on my porch in Vermont! Paella is a famous global dish and there are as many variations as there are cooks! The undisputed home of Paella is in Valencia Spain where it was originally cooked over a wood fire with the rice from the fields nearby and whatever other ingredients were at hand. In this episode, I make it with all locally sourced sausage and chicken but it can also be made with fish or vegetarian. Paella is a wonderful meal to share with large groups of family and friends. For the end of the season celebration at our company Jackson Hole Mountain Guides I made dinner for 20 in one paella pan! Once the rice has cooked in your homemade broth steeped with saffron, the longer it sits off the fire the tastier it becomes! My favorite part is the crusty, browned layer of arborio rice on the bottom called the “saccarat” that has been in living in the juices. For dessert my mom’s molasses cookies are the perfect sweet ending for a hearty meal with a big cup of tea around the fire!
